introduction to persian food 3: peste kham




peste kham (=fresh pistachios)
 fresh pistachios have a pink and white skin which feels a bit like a flower petal
when peeling off the skin the traditional shelled pistachio nut is revealed 
the frech pistachio is much softer than the dried ones 
please note: if you come across a fresh pistachio of which the hard shell is not open, please don’t try cracking it open with your teeth!!! :)
