peste kham (=fresh pistachios)
fresh pistachios have a pink and white skin which feels a bit like a flower petal
when peeling off the skin the traditional shelled pistachio nut is revealed
the frech pistachio is much softer than the dried ones
please note: if you come across a fresh pistachio of which the hard shell is not open, please don’t try cracking it open with your teeth!!! :)

are available during the first weeks of spring
they are unripe almonds, picked before their shell has a chance to harden, and before the almond has had a chance to become mature
they have a hairy coating but they are rubed against each other (its a very very time consuming process) to become "hairless" :) .. thats why they are relatively expensive in iran, specially the small ones
